Vertical Dough Mixer

A vertical dough mixer uses vertically rotating paddles working inside a movable mixing bowl to knead dough quickly and uniformly.

Vertical Dough Mixer

Product Overview

Wanttone’s industrial vertical dough mixer combines double mixing paddles with dual-motor planetary drive, delivering stronger power, faster kneading and better dough consistency than single-paddle designs. With batch capacities from 150 kg to 500 kg, a detachable bowl on wheels for easy dough transfer, and intelligent PLC touch-screen control, it is the ideal dough mixer for high-fat cookie dough, crisp biscuit dough, fermented biscuit and soda cracker production.

Capabilities & Applications

Key Features

  • Dual-Paddle, Dual-Motor Planetary System

Two counter-acting paddles driven by independent motors significantly increase mixing efficiency and shorten batch time while guaranteeing stable, homogeneous dough quality.

  • Movable, Replaceable Mixing Bowl – The flat “8”-shaped stainless steel bowl runs on wheels and can be swapped between batches

a decisive advantage for fermented dough and soda biscuit production where bowls rest between stages.

  • Variable Speed Control

Dual-speed operation (e.g., 23/50 r/min paddle speeds, revolution/rotation combinations up to 26/105 r/min with frequency conversion) covers gentle blending through intensive gluten development.

  • Hygienic Dead-Corner-Free Design

Bowl, shaft and paddles in stainless steel with smooth surfaces; electric bowl lifting keeps the drive clear of the product zone for easy cleaning and maintenance.

  • Intelligent PLC with Touch Screen

Recipe storage, automatic mixing programs, emergency stop and automatic alarm protections ensure safe, repeatable, low-labor operation.

  • Heavy-Duty Industrial Structure

Thick-wall frame, branded key components and neatly arranged, fully cased wiring deliver years of reliable three-shift service.

Applications

  • The vertical dough mixer excels at high-fat cookie and short dough, crisp and soft biscuit dough, and — thanks to its exchangeable bowls — fermented dough for soda crackers and fermented biscuits. It mixes flour, yeast, sugar, oil, water and additives into uniform dough for cookie production lines, cracker lines and soft/hard biscuit lines. Paired with a tilting machine, the bowl can be lifted and poured directly into the dough feeding hopper serving the laminator, sheeter or rotary moulder.

A Defined Role in the Line

  1. Upstream Requirements

Confirm the incoming material or product condition, target throughput, infeed height and available utilities.

  2. Core Machine Function

A vertical dough mixer uses vertically rotating paddles working inside a movable mixing bowl to knead dough quickly and uniformly.

  3. Downstream Integration

Match discharge height, line speed, control signals, guarding and cleaning access with the next operation.

The Wanttone Difference

Choosing a vertical dough mixer from Wanttone means choosing 40-plus years of dough technology know-how. Our Foodstuff Machinery Research Institute, staffed by professional engineers since the late 1990s, continuously refines paddle geometry, speed ratios and bowl design for different dough rheologies — knowledge we also apply daily in our own Wanttone-brand biscuit factory. We don’t sell catalogue machines off the shelf: capacity, bowl quantity, lifting method and control level are all customizable to your process. Every machine is manufactured under ISO 9001 control, and our expanded pre-sales and after-sales teams provide installation, commissioning, recipe support, worker training and scheduled technician visits throughout the machine’s life.

Frequently Asked Questions

When should I choose a vertical dough mixer instead of a horizontal one?

Vertical mixers are preferred for high-fat cookie and short dough, smaller to medium batch sizes, and especially fermented dough where dough rests in the bowl — extra bowls let production continue while a batch ferments. Horizontal mixers suit very large batches of hard dough. We can advise based on your product mix.

How many mixing bowls do I need?

For non-fermented dough, one to two bowls per mixer is typical. For soda cracker and fermented biscuit production, we recommend three or more bowls to keep the mixer working during fermentation/resting. Additional bowls are available at any time.

Is the machine easy to clean and keep sanitary?

Yes. The bowl detaches completely for washing, product-contact parts are stainless steel with no sanitary dead angles, and the lifted drive head gives full access to the paddles. Safety interlocks prevent operation with the head raised.

Can the mixer handle stiff cracker dough?

Yes. The dual-motor planetary drive with a heavy-duty gearbox is specifically designed for tough, low-moisture dough. Dual-speed control allows slow initial blending and powerful final kneading without overloading.

What after-sales support and spare parts are available?

We provide commissioning, operator training, a recommended spare-parts package (seals, paddles, electrical components) and lifetime technical support via email and WhatsApp, with technicians dispatched overseas when needed.
